Homemade Wine

These classes are held in conjunction with Taunton Amateur Winemakers.
The classes will be held in the Wine Marquee.
All individual competitors are eligible to enter these classes.

Still Wines must be exhibited in clear unthreaded and unbranded white flint glass approx. 26 fl.oz. (75cl) capacity with rounded and NOT sloping shoulders. Bottles should be filled so that when the cork is fully inserted the gap between the bottom of the stopper and the wine is between 6 to 20 mm.

Description:

A Liqueur. Liqueurs must be exhibited in clear colourless glass punted ½ wine bottles of approx. 13 fl.oz. (370ml). Bottles should be filled so that when the cork is fully inserted the gap between the bottom of the stopper and the liqueur is between 6 to 20 mm (approx. ¼” to ¾” ).
This class MUST have a base of home-made wine. May be fortified to a maximum of 40% with a recognised spirit. The flavour and spirit to be stated on the label.

Class: 1131 Ginger Wine

Description:

80g (3oz) Root Ginger
2 Oranges.
2 Unwaxed Lemons.
225g (1/2lb) Sultanas Chopped or Minced.
1.3kg (3lb) Sugar
Yeast Nutrient.
Yeast, Universal.
Water to make 4.5l (1 gallon).
Method and Guide
Peel the orange and lemon thinly, avoiding the white pith, and put the peel and juice into a bucket along with the chopped sultanas.
In a suitable sized pan bring 3½ litres of water to the boil and add to it the sugar and the ginger peeled and grated, return to the boil and reduce heat and simmer for 30 minutes, bring to boiling and pour over contents of bucket.
Lightly cover to prevent contamination and allow to cool to 20°c. Add yeast and nutrient, cover and leave in a warm place for 10 days.
Next strain into demijohn, top up with cooled boiled water and fit airlock, and allow to ferment. Once all fermentation has stopped, rack into a clean demijohn and leave for 2 -3 months or longer before bottling.
