Raspberry Bakewell Cake
Ingredients:
140g ground almond
140g butter, softened
140g golden caster sugar
140g self-raising sugar
2 eggs
1 tsp vanilla extract
250g fresh raspberries
2 tbsp flaked almond
Icing sugar, to serve

Method:
Heat oven to 180°C/160°C fan/gas 4 and base-line and grease a deep 20cm loose-bottomed cake tin.
Mix the ground almonds, butter, sugar, flour, eggs and vanilla extract in a food processor until well combined.
Place half the mix into the cake tin. Scatter the raspberries, then spread the remaining cake mixture on top and roughly smooth.
Scatter with flaked almonds and bake for 50 minutes until golden. Cool, remove from the tin and dust with icing-sugar to serve.

Lemon Yoghurt Cake
Ingredients:
300g caster sugar
55g butter, softened
3 large eggs, separated
225g Greek yoghurt
Finely grated zest of 1 lemon
175g self-raising flour
For the icing:
115g icing sugar, sifted
1 ½ tablespoons fresh lemon juice
Method:
Preheat the oven to 180°C/Fan 160°C /Gas 4. Grease a 20cm (8in) deep round cake tin and line the base with non-sticking baking paper. Beat together the sugar, butter and egg yolks in a bowl. Add the yogurt and lemon zest and beat until smooth. Genty fold in the flour. Whisk the egg whites to a soft peak, then carefully fold into the cake mixture. Turn into the prepared tin and bake in the preheated oven for 1-1 ¼ hours, or until the cake is well risen and firm to the touch. Leave to cool in the tin for a few minutes then turn out peel off the baking paper and finish cooling on a wire rack. For the icing, mix together the sifted icing sugar and the lemon juice and pour over the cold cake. Smooth over with a palette knife and leave to set.

An exhibit depicting 'Top of the Pops'. To be staged on a table measuring 122cms x 61cms ( Approx. 4ft x 2ft). Any number of items may be displayed, but six items of varied skills will be judged for points; these to be numbered 1 to 6 and listed on a card.
Marks will also be awarded for Presentation. Scoring up to 10 points for each item numbered 1 to 6, up to 15 points for Presentation and up to 10 points for variety / range of skills. Maximum points 85. PLEASE NOTE: NO SIDE OR BACK BOARDS AND THE EXHIBIT WILL BE VIEWED AND JUDGED FROM THREE SIDES.
