Class: 1 A Banana Loaf Cake - set recipe
Description:

Class 1 – Banana Loaf Cake
Cake Ingredients –
275g white self-raising flour
1 level teaspoon baking powder
1 teaspoon ground mixed spice
100g soft, light brown sugar
3 very ripe, medium bananas (approx 225g peeled weight)
3 x large eggs
150ml sunflower/vegetable oil

Line and grease a 2lb loaf tin
Preheat oven to 180C/160C fan

Method –

Peel the bananas and mash with a fork.
Tip into large mixing bowl and add eggs, sugar and oil. Use a fork or whisk to combine.
Add the flour, baking powder and mixed spice and whisk all together until thoroughly combined.

Pour the mixture into the prepared cake tin and place in preheated oven for approx. 40 mins (test with a skewer) or until cake is well risen.
Once baked, cool in tin for 10 mins and turn out.

Class 7 - Chocolate Cookies
Set Recipe

Ingredients -
125g unsalted butter
100g light brown sugar
100g white granulated sugar
1 medium egg
1 teaspoon vanilla extract
25g cocoa powder
225g plain flour
1/2 teaspoon bicarbonate of soda
1/2 teaspoon baking powder
1/2 teaspoon salt
150g milk chocolate chips
150g white chocolate chips

Preheat oven to 180C/160C fan and line baking trays with parchment

Method -
Mix together the butter and both sugars until light and fluffy.
Mix in the vanilla and egg until thoroughly combined.
Add in the cocoa powder, plain flour, bicarb, baking powder and salt and mix until a thick paste/cookie dough is formed.
Fold in the chocolate chips.
Portion and roll into approx. 24 balls and place onto trays to make sure they have room to spread!
Bake in the oven for 10-12 mins until spread out and crinkly.
Once baked, remove from oven and leave to cool fully.
