Class: 509 Chocolate Orange Ring Cake

Description:

Chocolate Orange Ring Cake
Ingredients:
2 small oranges
85g plain chocolate
250g self-raising flour
1 ½ tsp baking powder
175g butter, softened, plus extra for greasing
200g caster sugar
3 eggs, beaten

Topping:
175g icing sugar
2 tbsp orange juice
55g plain chocolate, broken into pieces

Method: Preheat oven to 160°C / 325°F / Gas 3. Grease an 850ml / 1½ pint ring mould. Grate the rind from one of the oranges and set aside. Pare the rind from the other orange and set aside. Cut the skin and pith from the oranges, then cut them into segments by cutting down between the membranes, with a sharp knife. Chop the segments into small pieces, reserving as much juice as possible. Grate the chocolate coarsely.

Sift the flour and baking powder into a bowl. Add the butter, caster sugar, eggs, grated orange rind and any reserved juice. Beat until the mixture is smooth. Fold in the chopped oranges and grated chocolate. Spoon the mixture into the prepared tin and bake in the preheated oven for 40 minutes, or until well risen and golden brown. Leave in the tin for 5 minutes, then turn out onto a wire rack to cool.

Sift the icing sugar into a bowl and stir in enough orange juice to make a coating consistency. Drizzle the icing over the cake. Put the chocolate in a heatproof bowl set over a saucepan of gently simmering water until melted. Drizzle the melted chocolate over the cake. Cut the reserved pared orange rind into thin strips and scatter over the cake.

Class: 511 Blueberry Lime Loaf Cake

Description:

Blueberry Lime Loaf Cake
Ingredients:
200g unsalted butter
200g caster sugar
200g self raising flour, plus 1 tbsp for dusting
4 eggs
Zest of lime
200g fresh or frozen blueberries

Buttercream:
125g unsalted butter, at room temperature
250g icing sugar
Juice of 1 lime

Decoration:
100g blueberries
Lime zest

Method: Preheat oven to 180°C / 160°C fan and grease and line a 900g loaf tin with parchment paper. Put the butter and caster sugar into a bowl and beat until light and fluffy. Add the self-raising flour, eggs and lime zest to the bowl, mix again until combined.

Put the tablespoon of plain flour into a bowl and add the blueberries, mixed until they are coated (this stops the blueberries all sinking to the bottom of the cake). Fold the blueberries through the cake mixture, then pour into the prepared tin and bake for 50-55 minutes, or until baked through. Remove from the cake from the oven, and leave to cool fully in the tin while you make the buttercream.

Add the butter to the bowl and beat on its own for a few minutes to loosen and soften. Add the icing sugar and beat again until combined. Finally, add the lime juice and beat again. Pipe or spread the buttercream onto the loaf cake, then sprinkle over the blueberries and lime zest.
