Recipe:
Finely grated rind of 2 Oranges
5oz currants
5oz raisins
5oz soft brown sugar
1 Egg.
10oz SR Flour
Half Pint Hot Tea
Method.
Put the fruit, sugar & orange rind in a heatproof bowl and pour over the tea. Stir very well, cover with a plate and leave to stand until cold.
Grease and line a 2lb loaf tin.
Beat the egg and mix into the soaked fruit. Stir in the flour. Pour mixture into prepared tin and bake for approx.. 1 hour – 300F/150C; Gas Mark 3.
