Recipe - Fruit Tea Loaf
300g Mixture Dried Fruit and Cherries
Approx 75ml grated rind and juice of one orange
100 Soft light brown sugar (or light muscavado)
225g Self Raising Flour
225ml Hot Tea
50g Soft Butter
1 Egg
4 Tbsp Demerara Sugar
Soak the fruit - place dried fruits in a bowl and pour over the hot tea, orange rind and juice. Cover with clingfilm then leave for a least 4 hours or overnight. Preheat oven to 180C (160 Fan)/Gas mark 4. Grease and line the base of a 2lb loaf tin. Beat together the butter and sugar until creamy then beat in the egg and flour. Carefully stir through the fruit mixture. Spoon the mixture into the tin then smooth the surface with the back of a spoon. Sprinkle all over a thick layer of demerara sugar. Bake for 1 hour or until a skewer inserted into the centre comes out clean. Leave to cool in the tin, then turn out.
